Tomato and Basil Soup
Low Fat Recipes

Serves 4
Ingredients
- 1½ lb fresh tomatoes
- 1 tbsp olive oil
- 1 bay leaf
- 1 onion (peeled and chopped)
- 2 cloves of garlic (peeled and crushed)
- 1 tbsp chopped basil
- 1 tbsp tomato puree
- 1 ¼ pt vegetable stock
- 1 tbsp low fat creme fraise
Seasoning
Method: 1.
Chop the tomatoes into large chunks. Heat
the oil in a large saucepan, add onions, garlic and basil.
Cook for 2-3 minutes.
Method: 2.
Add tomato puree, bay leaf and vegetable
stock, stir well and season. Cook for 15-20 minutes, season
to taste. Hand blend and pass through sieve. Serve with
some crispy bread.
