Crispy Roasties with Thyme & Garlic

Serves 8
Ingredients:
3lb potatoes (peeled and halved or quartered)
210ml vegetable oil
2 tbsp thyme leaves
6 cloves garlic (peeled and sliced)
Method:
- Allow 3tbsp of oil or fat for every 11/2lb potatoes. Peel and cut the potatoes into even sized pieces, cook them in boiling, salted water for 10 minutes. Dry thoroughly.
- Now slightly prick the outside of the potato with a fork. Heat the oil or fat (never butter because it burns easily), in a roasting pan in the oven. Toss each potato in oil. You could add rosemary or garlic. Cooking time will depend very much on the size of the potatoes.
- Average sized potatoes will take about 45 minutes in a hot oven 220 ° C, gas mark 7. Sprinkle with some sea salt just before serving.
