Leek and Potato Soup with Smoked Bacon and Basil

Serves 4

Ingredients

2 oz butter,

14 oz leeks chopped,

8 oz onions chopped

8 oz Potatoes diced,

2 pints Chicken Stock,

150 mls cream,

12 basil leaves,

2 oz smoked bacon,

2 oz flour,

salt/pepper

Method:

Melt butter in saucepan. Add leeks, bacon and onions. Cook over a low heat but do not brown it. Add potatoes and flour. Cook for two minutes. Add stock and simmer until the potatoes are tender. Add the cream and simmer for 5 minutes. Add basil leaves and hand blend. Season to taste. Serve with cream, croutons and herbs.
